build(deps): resolve Dependabot advisories and prepare 1.12.0 - #77

uv.lockto patched releases for every open Dependabot alert: authlib 1.9.1, brotli 1.2.1, brotlicffi 1.2.1.0, certifi 2026.10.23, dnspython 2.9.1, fastmcp-slim 3.4.11, filelock 4.2.4, mcp 1.30.0, opentelemetry-* 1.45.2, uv 0.13.6, virtualenv 21.15.1.mcpis kept on 1.x andfastmcp-slimon 3.x; the advisories only require 1.30.0 and 3.4.10, so major upgrades were avoided.Second commit prepares 1.12.0 (versions, extras, CHANGELOG) as the replacement for 1.11.0.
